Chicken and Potato Mess

Quick, Easy and Tasty


Ingredients:
1 kg potatoes - preferably new- use small potatoes or cut larger ones up
6 Chicken thighs - preferably boned but unboned is ok if it’s what you happen to have in the fridge. Chicken breast would do. Remember to adjust cooking time for different cuts.
3 Cups Cherry or 4-5 large Tomatoes, Chopped 
Basil, Large Bunch
4 T Olive Oil
2 T Balsamic Vinegar
2 Large Red Onions, Chopped
4 or 5 Cloves Garlic, Peeled
Couple Grinds of Pepper
Pinch Salt

1. Boil potatoes in water with the oxo cube until almost cooked. I like how the oxo cube adds flavor to the potatoes, but the water is ideal for later on in the recipe so do not discard.

2. In a heavy based roasting dish (with lid) over a medium heat add 3 good glugs of olive oil. Brown chicken and turn off heat. Add particularly cooked potatoes and a 1/2 cup of the water.

3. Place chicken and the rest of the ingredients in a ovenproof baking dish with a lid.

4. Bake for 40 minutes.

Bit on the Side: Slice and Toss Potato Bake

Slice and Toss Potato Bake

Ingredients:
8 - 10 Medium Potatos (Peeled and Sliced)
2 Medium Onions (I often use 1 Red and 1 White)
1 Cup Chicken Stock (or 2 Teaspoons Chicken Stock Powder and 1 Cup Water)
1 Cup Milk
1 Teaspoon Mixed Herbs
Pinch Salt
Some Black Peper
1/2 Cup Grated Cheese

1. Preheat oven to 180C.

2. Place all ingredients appart from cheese in a roasting dish and toss (the dish should be small enough that there are at least 3 layers of potato).

3. Cook for 40 minutes covered with foil (potato should be soft when pressed with a fork).

4. Take foil off and sprinkle cheese over top and cook (to melt cheese) for a further 10 minutes before serving.

Quick Easy Dinner Idea


Sausages are one of those things that are nice to eat by themselves in a piece of bread but for something a little different (to the ordinary flat meal) they can easily be jazzed up. 

.
For a quick dinner in a hurry on a warm summers night I chop up some good quality sausages as well as potatoes, break up some stale crusty bread and some peeled cloves of garlic. Place in a roasting tray and pour enough olive oil over to coat, then toss. This will ensure the bread and potato goes all crunchy on the outside in contrast to the sausage (and inside of the potato). Place some Rosemary on top and bake for about half an hour until cooked. Serve with a green salad

Bit on the Side: Spicy Chips

Chips


Ingredients:
1 Tablespoon Chicken Stock Powder
1 Tablespoon Cajin Seasoning
3 Tablespoons Cornflour
½ Tablespoon Mixted Herbs


1 Tablespoon Olive Oil
1kg Potatoes, Washed and Cut into Wedges


Combine dry ingredients in plastic bag.

Place potatoe wedges in and shake.

Place coated wedges on baking tray with lined with baking paper.

Pour oil over top, toss and cook for 30 minutes at 180C or until nice and golden. Don't forget to turn at least once.
